If you use Signal, Discord, or any other messaging app and you DON'T want Google or Apple monitoring/reading/learning from your messages, follow these steps.
Android:
1. Open Google app
2. Tap your profile photo
3. Settings
4. Google Assistant
5. "Your Apps"
6. Choose the app (e.g., Signal)
7. Toggle "Let your assistant learn from this app" off

in reply to bazil ⏚ • • •Wow I was scared to discover that the option was on. I didn't follow your path because my Gapps are already disabled but I found this option in the system setting, under Google services. But then I checked my recent activity record and it's empty because the assistant in itself was already off. Same for all other privacy settings.
Thus be sure to check if it's also your case and if not, you should definitely disable the assistant entirely.
